Pectinase (polygalacturonase) produced by Aspergillus foetidus is categorised as (1->4)-α-D-galacturonan glycanohydrolase. Pectinase (polygalacturonase) catalyzes the random hydrolysis of internal 1-4 linked α-D-galacturonosidic bonds in the main chain of polygalacturonates and pectin substrates with a low degree of methyl esterification.
Unit of activity for dry form: 30 u/g
Pectinase (polygalacturonase) is used in the following applications:
- Fruit juice industry - production of pulpy nectars; reducing the viscosity of citrus concentrates and extending the cloud stability of citrus juices.
- Obtaining the highly viscous juice in tomato processing industry.
- Clarification of fruit juices and liquefaction of plant tissues.
The dosage depends on the raw materials and technological parameters of the process. The optimal dosage can be selected by laboratory or production tests.
