Cellulase is the enzymatic preparation produced from Trichoderma sp. for the destruction of the non-starched polysaccharides of raw material. Pure cellulase is categorized as 4-β-D-glucan 4-glucanohydrolase. Pure cellulase catalyzes the random hydrolysis of internal 1-4 linked β-D-glucosidic bonds in cellulose, cereal β-D-glucans and lichenin.
